  • 1 small zucchini
  • 1 small carrot
  • 1 cup baby spinach
  • ¼ cup honey
  • 1 cup peanut butter
  • ¼ cup cocoa powder
  • 3 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • 2 tsp chia seeds
  • 1 tsp vanilla
  • Optional chocolate chips *will increase sugar and carb content.

Healthy chocolate muffin-alternative for kids

  • Add ingredients to a food processor and mix well. Alternatively, mash bananas, grate zucchini and carrot before adding the remaining ingredients and mix well.

  • Add mixture to pre-greased muffin trays and bake in the oven at 160 degrees.
