Lower carb Zucchini Slice

  • 2 x large zucchinis (grated)
  • 5 x eggs, lightly beaten
  • 1 cup grated cheese
  • 3/4 cup roasted pumpkin and capsicum
  • 1 x large onion, finely chopped (fried in 1 x tbsp olive oil)
  • 1 cup Vetta Smart protein plain flour
  • 1/2 cup extra virgin olive oil
  • 1 x tsp baking powder
  • Fresh herbs of choice and pepper to taste

Enjoy this zucchini slice - perfect to make during the week for work lunches, or to add into the kid's lunchbox. 


1. Line slice tin with baking paper and pre-heat oven to 180 degrees.

2. Grate zucchini, squeezing excess liquid with paper towel.

3. Combine eggs, oil and flour. Lightly beat.

4. Add zucchini, roasted vegetables, cheese and herbs.

5. Pour mixture into baking tin and top with extra grated cheese.

6. Cook for 30-40 minutes, or until the top looks golden.
