Enjoy this zucchini slice - perfect to make during the week for work lunches, or to add into the kid's lunchbox.
Method
1. Line slice tin with baking paper and pre-heat oven to 180 degrees.
2. Grate zucchini, squeezing excess liquid with paper towel.
3. Combine eggs, oil and flour. Lightly beat.
4. Add zucchini, roasted vegetables, cheese and herbs.
5. Pour mixture into baking tin and top with extra grated cheese.
6. Cook for 30-40 minutes, or until the top looks golden.
