Ingredients
500g Chicken Breast mince 1 Teaspoon red curry paste (or to taste) 1/3 Cup sweet chilli sauce 1 Egg 1/3 Cup low fat cottage cheese ¾ Cup multigrain breadcrumbs (For lowering carb, reduce to 1/2 cup to reduce your total carbohydrate amount) 1 Tablespoon reduced salt soy sauce ¼ Cup coriander leaves, roughly chopped Drizzle of olive oil for cooking
Method:
Preheat oven to 180°C
Place all ingredients in a bowl and mix well.
Roll into walnut sized balls or small patties.
Place onto an oven tray lined with baking paper and cook in oven at 180°C for 15 minutes or until cooked through and golden.
