  • 1 small Zucchini
  • 1 small Carrot
  • 1 cup Baby Spinach
  • ¼ cup Honey
  • 1 cup Peanut butter
  • ¼ cup Cocco powder
  • 3 Eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Pinch of Salt
  • 2 tsp Chia seeds
  • 1 tsp Vanilla
  • Optional chocolate chips *will increase sugar and carb content

Why not try these healthy chocolate breakfast muffins as a breakfast alternative for your kids.... or you the big kid! They are super easy to make and taste delicious! 

    Method

    Add all ingredients to a food processor and mix well, or mash bananas, grate zucchini and carrot before adding the remaining ingredients and mix well.

    Add mixture to muffin trays and bake in the oven at 160 degrees for 25 minutes or until cooked through. Makes 16 muffins.
