Method
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and diced onion, sauté until the onion is translucent, about 2-3 minutes.
- Add the diced carrot and cook for another 2 minutes, until slightly softened.
- Stir in the cauliflower rice and frozen peas. Cook, stirring occasionally, for about 5 minutes until the cauliflower is tender.
- Add in the cooked tofu back to the skillet with the cauliflower rice mixture.
- In a small bowl, mix together the soy sauce and rice vinegar. Pour the sauce over the cauliflower rice and tofu mixture. Stir well to combine to evenly distribute the sauce.
- Cook for another 2-3 minutes, allowing the flavours to meld together. Taste and adjust seasoning with salt and pepper if needed.
- Garnish with sliced spring onion and sesame seeds if desired.
- Serve hot and enjoy your delicious low-carb cauliflower fried rice with tofu!
