  • 1 head of cauliflower grated into rice like pieces or
  • 4 cups of premade cauliflower rice
  • 200g firm tofu, pressed and cubed
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce (or tamari for a gluten
  • free option)
  • 1 tablespoon rice vinegar
  • 2 spring onions sliced (for garnish)
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Here's one for our Gluten free veggie lovers, full of flavour this low-carb Cauliflower fried rice with tofu will be a favourite in your household!

    Method

    • Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
    • In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and diced onion, sauté until the onion is translucent, about 2-3 minutes.
    • Add the diced carrot and cook for another 2 minutes, until slightly softened.
    • Stir in the cauliflower rice and frozen peas. Cook, stirring occasionally, for about 5 minutes until the cauliflower is tender.
    • Add in the cooked tofu back to the skillet with the cauliflower rice mixture.
    • In a small bowl, mix together the soy sauce and rice vinegar. Pour the sauce over the cauliflower rice and tofu mixture. Stir well to combine to evenly distribute the sauce.
    • Cook for another 2-3 minutes, allowing the flavours to meld together. Taste and adjust seasoning with salt and pepper if needed.
    • Garnish with sliced spring onion and sesame seeds if desired.
    • Serve hot and enjoy your delicious low-carb cauliflower fried rice with tofu!
